Day 36 - Eggs, Carrots and Salmon - Not All At Once

Good Afternoon!

Another day at home. The bright side of that is that no money is spent while at home! Always a good move.

This morning I decided to change it a bit and made two fried eggs (using just a bit of olive oil).

Then when contemplating what to do about lunch, I knew I had some fun looking carrots in my refrigerator, so I looked up a recipe for carrot soup! Here's what I found:

Carrot-Coriander Soup

Now, I don't have any coriander and really don't know what it tastes like, so I followed the recipe exact, but didn't use coriander of course. I also figured that honey would go great in the soup, so I added two tablespoons to the mix! Further I don't have any cilantro, and it does not agree with me, so there will be no garnish of cilantro.

Here's the fun part about the carrots:


They are organic and come in three different colors! Trader Joe's carries these.

I was surprised to see that the purple ones had white centers. Chopped and ready to be cooked.


In the pot with the onion and cooking for 10 minuted with the butter.


Added salt, pepper and honey, then simmered for about 15 minutes. Once carrots were tender, I allowed them to cool to almost room temperature, then put them in the Ninja Food Processor and blended the heck out of them. Then back onto the stove to warm.

As it was warming I did a tiny taste test by adding just a pinch of cinnamon to the spoon. And, it was good! I tested it again when the soup was warm and decided to add the cinnamon.


And so, this is lunch! Did I like the taste? It was ok. Would I make this soup again? Probably not. Would it taste better with typical orange carrots? My guess is yes, but I'm not going to give it a try.

That makes for 3 different soups I've made thus far:

1. My chicken cabbage soup - was a definite yes!
2. The broccoli soup - a no.
3. The carrot soup - a no.

Tonight I'll snack on some smoked salmon as a light dinner.

Time to get back to the store for some more greens, pears, cottage cheese, etc.

Time for me to get some laundry done!
