220 calories.
I made a mocha coffee drink for a late morning snack - a Mocha Hazelnut coffee. It tasted way too sweet for me - my taste buds have to be changing. The drink was probably 100 calories - between the chocolate and the milk. The coffee didn't have any calories, nor did the hazelnut as I used sugar free Torani.
Late lunch was a Parmesan Cauliflower bake that was OH MY GOOD! Here's the link to the recipe:
Parmesan Cauliflower Bake
Note, in the recipe above, they use ramekins to bake it in. I did the same as evidenced by my photo. I do think, though that if you wish to use a casserole dish, it would be fine, but I'm sure the baking time would have to be increased.
I also had a baked Mahi-Mahi filet.
The total dinner was only about 190 calories. It was enough for me. Except, I COULD have eaten a whole lot more of the Cauliflower. It was just awesome!
There's our little peacock friend!
Here's a little info on cauliflower. It's best not to boil it as it leaches the nutrients. It can be roasted or grilled instead. Cauliflower may reduce the risk of bladder, breast, colon, prostate and ovarian cancers. The orange variety contains 25 times more beta-carotene than the white. The purple contains anthocyanins. (Whatever those are) Ah, I looked those up on Google. Pretty complicated explanation. Have a look if you're so inclined:
Anthocyanins
And, for the fun of it, below is a photo of a purple cauliflower I grew right here in my little planter box a couple of years ago!
See you tomorrow.
