Day 3 - Making Headway and Feeling Confident

Well, Day 2 started in a rush, kinda. The day before I had changed the sheets on the bed and had great crispy clean sheets to sleep in. During the night the promised rain arrived and you must know how it feels, waking with crisp sheets and hearing the rain outside. Yes, it was very difficult to "rise and shine" even though I knew that I had two early appointments. Needless to say, when I finally put my feet on the ground, I was in a RUSH to get out the door.

Thankfully, I had boiled two extra eggs yesterday. Yep, 2 hard boiled eggs and a glass of ice water - oops, I forgot, "I could have had a V8!" I'll do that next time! I also grabbed a granola bar as I headed out the door. One for the road, so to speak. That gives me a breakfast of about 360 calories, allowing for still over 1,000 calories for the day!

My morning was "fruitful", with my work going quite well. Once I completed that, I had time to stop by Wal-Mart to refill my pantry, considering I had given away all my "fat food" yesterday. Came home with fresh fruits, veggies, non-fat Greek Yogurt, boneless, skinless chicken breasts and some granola bars. I stopped by the kitchen appliances, looking for a blender or food processor. I found just the thing! The Ninja Master - this sweet appliance (no, I'm not selling for them, just sharing what I'm learning) does both! What a nice change to what had previously been contained in my pantry and refrigerator.


When I got home it was past time for lunch, so I got after it! It was time to play with my new toy and I chose to make a power berry smoothie. Here's the link, and I think you'll enjoy some of the other healthy shacks you'll find here: Power Berry Smoothie & Other Diet Conscious Snacks


The Ninja was fun and I thought I was smarter than the authors of the recipe on the link were so used ice instead of the water they suggested - just a hint stick with the water. The frozen berries make it smoothie enough and it was a pain getting the ice blended. I enjoyed about half of the smoothie and a Kashi granola bar. That really was enough to quench my appetite and I put the other half of the smoothie in the refrigerator for tomorrow's breakfast. Calories for lunch were 279 total (Actually less as I didn't drink the whole smoothie)

Dinner-time came and although I wasn't that hungry due to the late lunch of berry smoothie and granola bar, I figured I'd better get with it. Here's the ingredients (my own concoction)

1/2 Boneless, skinless chicken breast 224 Calories
1/2 Cup Sliced mushrooms 10 calories
1/4 cup sliced zucchini - 15 calories
3 green onions sliced - 10 calories
4 Tbsp Olive Garden Light Italian - 60 calories

TOTAL - 319 calories - can't beat that! For a total for today before my wine :-) of 958 calories!


No, I didn't share with the peacock! Anyway - I chopped the chicken into bite sized pieces, sauteed in 2 tablespoons of the Olive Garden Italian dressing (yes, only 30 calories per 2 tablespoons - you can buy this OG Lite Italian at WalMart) I added the chopped green onion and let it saute until almost done, then added the mushrooms. The zucchini I sauteed in another pan starting about the same time as the mushrooms. Used the other 2 tablespoons of dressing with the zucchini. 

It all came together and voila! Actually, I couldn't eat it all, so half is left in the fridge for today's lunch. Thus, Here's my plan for today:

Breakfast - 1/2 fruit smoothie - 70 calories
Crunchy raisin bran - 230 calories including the milk

Total - 300 calories

Lunch  - Left-overs from the chicken/zucchini - As the total cooked yesterday was 319, I'll just say 200 Calories. I'll probably add a salad to it.

Not sure about dinner, but I am beginning to think I will do better with the larger meal at lunch and something smaller at dinner. I'm leaning toward either shrimp salad or possibly a pear with cottage cheese. Will calculate that when the time comes.

Day 2 was Successful! I'm CONFIDENT!
